Ratatouille is another recipe that I’ve been making forever, even before the movie came out. Even though ratatouille has french origins, I think my version is more like its Italian cousin. I use oregano, basil and tomato paste.
I got this recipe from my mother years ago. For me, this is really comfort food. We used to eat it as a side dish, but there really is no reason that it can’t be a main dish all on its own.

Ratatouille
I put each of the vegetables in one at a time. While the first goes in, I prepare the next. There's no waiting time.
Ingredients
- olive oil - 2 tablespoons
- onion - 1 large, chopped
- mushrooms - 4, sliced
- garlic - 2 tablespoons, chopped
- carrots - 2 large, chopped
- bell pepper - 1 large, chopped
- kishuim - 2 large, chopped
- eggplant - 1 medium, chopped
- tomato paste - 1 container
- water - 1/2 cup
- oregano - 1 teaspoon
- basil - 1/2 teaspoon
- bay leaves - 2
- salt - 1 teaspoon
Instructions
- Heat oil in a large frying pan
- Add vegetables, one at a time, cooking each of them down before adding the next
- Add spices, tomato paste and water and simmer for 15 minutes
- Serve with mashed potatoes
